Watermelon Lime Popsicles

Six cups of watermelon cubes. A quarter cup of lime juice. Two tablespoons of honey or agave. Blend. Pour into moulds. Freeze for four hours. Done.

Three ingredients and a blender. No added ice needed because the watermelon itself freezes. A squeeze of lime stops them from being one-note sweet. A drizzle of honey balances the tart. Run warm water over the mould to release. These don’t last long here.


Tips for Making Watermelon Lime Popsicles

Remove all seeds before blending

Seeds make gritty popsicles. Even seedless watermelons have small white seeds that blend into a grainy texture if you are not careful.

Blend until completely smooth. No chunks. Pour through a fine sieve if you want a completely smooth result.

Leave space at the top of the moulds

The mixture expands slightly as it freezes. Fill to about a quarter inch below the top.

Insert sticks after pouring. Some moulds have built-in stick holders. If not, freeze for one hour until partially set, then insert sticks and continue freezing.

These refreshing summer popsicles made with bright watermelon and a hint of lime are perfect for cooling down on a hot day.


Ingredients

  • 6 cups 1-inch watermelon cubes, seeds and rind removed
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey or agave syrup


Instructions

  1. Place the watermelon cubes in a blender and puree until smooth.
  2. Add the lime juice and honey (or agave syrup) to the blender and blend again until well combined.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert sticks and freeze for at least 4 hours or until solid.
  5. To release the popsicles, run warm water over the outside of the molds for a few seconds.

Notes

If using ice cube trays to freeze, consider dropping a few of these watermelon ice cubes in a glass of sparkling water with cucumber or lime slices for a beautiful and refreshing summer drink. These popsicles can be stored in the freezer for up to a month. For a sweeter version, add a tablespoon of honey or agave syrup to the puree before freezing.
