Vegan Blueberry and Peach Crumble

The moment you open the oven after forty-five minutes, the kitchen smells like a fruit stand in July. Three cups of blueberries and four sliced peaches with sugar, flour, and lemon juice, baked under a crumble of oats, flour, brown sugar, cinnamon, and melted vegan butter. The fruit bubbles up around the edges and the topping is golden and crunchy.

The peaches stay in large, recognisable slices. The blueberries burst into a purple sauce between them. The oat crumble on top is crunchy and sweet from the brown sugar and warm from the cinnamon. This has become one of our go-to summer desserts.

Tips for Making Vegan Blueberry Peach Crumble

Do not peel the peaches

The recipe says unpeeled. The skin softens during baking and holds the slices together. Peeled peaches dissolve into mush.

Slice them about half an inch thick. Even slices cook at the same rate.

Mix the crumble topping until just clumpy

Oats, flour, brown sugar, cinnamon, and melted vegan butter stirred together. It should look like rough, sandy clumps.

Scatter it over the fruit in uneven pieces. Do not press it down. Loose crumble bakes crunchier than a packed topping.

Frequently Asked Questions

Is this vegan?

Yes. Vegan butter replaces dairy butter. No eggs. No dairy. Check that your sugar is not processed with bone char if that matters to you.

Can I use frozen fruit?

Yes. Do not thaw. Add five to ten minutes to the baking time. Frozen fruit releases more liquid, so add an extra tablespoon of flour to the fruit mixture.

What should I serve this with?

Vegan vanilla ice cream or coconut whipped cream. The crumble is warm and sweet and needs something cold and creamy alongside it.
