Charred Corn Elote Nachos

If you have ever stood on a street corner eating elote off a stick, trying not to drip chipotle mayo on your shirt, you already understand why those flavors work so well. Now put all of that on a sheet pan of crispy tortilla chips and you have something that is simultaneously easier to eat and harder to stop eating. Elote nachos are the overlap in the Venn diagram of two things Mexico does better than anyone: street corn and loaded tortilla chips. They come together in under twenty minutes and work as an appetizer, a snack for movie night, or honestly as dinner if nobody is judging. The charred corn is what holds this together. Let it sit in a screaming hot skillet without touching it for a few minutes so it picks up real color and smoky sweetness.

Clean flavors. The chipotle lime crema, made by mixing mayo with adobo sauce and fresh lime juice, adds richness and a slow burn. Just right. Drizzle it in thin lines rather than dumping it on, so every chip gets some without the whole tray turning into a puddle. Cotija crumbled on top brings that salty, funky bite. One rule: eat these immediately. Nachos wait for no one, and soggy nachos are a waste of good ingredients.

Char the Corn and Mix the Chipotle Crema

Heat olive oil in a skillet over high heat and add the corn kernels. Let them cook without stirring for 3 to 4 minutes until they develop real char marks. Those blackened spots are where the smoky sweetness comes from. While the corn cooks, whisk together mayonnaise, adobo sauce from the chipotle can, and lime juice to make the chipotle lime crema.

Melt Monterey Jack Over the Chips

Spread a thick layer of tortilla chips across a large baking sheet. Scatter shredded Monterey Jack cheese over the entire surface so every chip gets coverage. Bake at 400 degrees for about 5 minutes until the cheese is melted and starting to bubble. Pull them out while the cheese is still gooey, since it continues to set as it cools.

Load Up the Elote Toppings and Serve Fast

Scatter the charred corn over the melted cheese, then drizzle the chipotle crema in thin lines across the surface. Crumble cotija cheese over everything and dust with chili powder and cayenne. Finish with sliced jalapenos, chopped cilantro, and lime wedges on the side. Eat these immediately. Nachos wait for no one, and every minute they sit is a minute closer to soggy.

Description

Elote nachos take two of the best Mexican foods and combine them into something greater than the sum of their parts. Crispy tortilla chips loaded with charred corn, creamy chipotle mayo, cotija cheese, lime, and cilantro — all the flavors of Mexican street corn in nacho form. These disappeared in under five minutes the last time we made them.

Ingredients

Units

  • 1 large bag tortilla chips (about 12 ounces)
  • 3 cups fresh or frozen corn kernels
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1 tablespoon adobo sauce from chipotles in adobo
  • Juice of 2 limes
  • 1 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 2 cups shredded Monterey Jack cheese
  • 2 jalapeños, sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Preheat oven to 400°F. Heat olive oil in a skillet over high heat. Add corn and cook without stirring 3 to 4 minutes until charred in spots.
  2. Mix the mayo, adobo sauce, and lime juice for the chipotle lime crema.
  3. Spread chips on a large baking sheet. Top with Monterey Jack cheese. Bake 5 minutes until cheese melts.
  4. Top with charred corn, drizzle with chipotle crema, and scatter cotija, chili powder, cayenne, jalapeños, and cilantro. Serve with lime wedges.

Notes

  • Char the corn on high heat without stirring — the blackened kernels add smoky sweetness that makes these nachos special.
  • Drizzle the crema in thin lines using a squeeze bottle or a fork for even coverage.
  • Eat immediately — nachos wait for no one. Soggy nachos are a tragedy.

Frequently Asked Questions

Can I make the components ahead?

Char the corn and mix the chipotle crema a day ahead and refrigerate separately. Assemble the nachos just before serving — melted cheese and crispy chips don’t hold well once combined.

What can I use instead of cotija?

Feta is the closest substitute — both are salty and crumbly. Queso fresco works too, though it’s milder and less funky.

How do I keep the nachos from getting soggy?

Eat them right away. Nachos wait for no one, and every minute on the tray after assembly is a minute closer to soggy chips.
