Raspberry Yogurt Popsicles

The simplest frozen treat I have ever made. Five hundred grams of vanilla yogurt, blended with two hundred fifty grams of raspberries and three tablespoons of sugar. Poured into popsicle moulds and frozen for at least four hours. The colour is a swirl of pale cream and raspberry pink, and each pop tastes like frozen yogurt from a shop.

The vanilla yogurt is already sweetened and flavoured, so the sugar is just enough to take the edge off the tart raspberries. The berries break down in the blender and stain the yogurt in streaks. You see both colours when you pull the popsicle from the mould.


Tips for Making Raspberry Yogurt Popsicles

Blend the raspberries with sugar first

Combine the raspberries and sugar in the blender and pulse until smooth. Then add the vanilla yogurt and blend briefly.

Brief blending with the yogurt keeps the swirl effect. Over-blending turns everything uniform pink.

Freeze for at least four hours

Pour into moulds, insert sticks, and freeze until solid. Overnight is best.

To release, run warm water over the outside of the mould for a few seconds. Do not twist the stick, you will break the popsicle.
