Strawberry Pistachio Smoothie Pops

The colour of these popsicles stopped me when I pulled them from the mould. Pale pink with flecks of green pistachio throughout. Two cups of fresh strawberries blended with shelled pistachios, agave nectar, and DREAM Boosted Original Coconut Beverage. Poured into moulds, frozen for at least four hours.

The pistachios do not just sit in the popsicle. They blend into the base and give it a nutty richness that plain strawberry popsicles do not have. The coconut beverage keeps everything creamy and dairy-free. The agave is mild enough to sweeten without covering the fruit. These taste expensive and take ten minutes to make.


Tips for Making Strawberry Pistachio Smoothie Pops

Blend until the pistachios are fully incorporated

Quarter cup of shelled pistachios blended with the strawberries and coconut beverage. Run the blender for at least thirty seconds until no large nut pieces remain.

Small pistachio flecks in the mixture are fine. Large chunks freeze hard and make the popsicle unpleasant to bite.

Freeze for at least four hours

Pour into moulds and insert sticks. The mixture is thin enough to pour easily.

Overnight freezing is best. Four hours is the minimum for a firm set. Run warm water over the moulds to release.
